While this cake is of course truly phenomenal as an accompaniment with tea, it works just as well for breakfast, or a mid-afternoon picnic.
1 Box of Pumpkin Spice Tea Cake Mix
3/4 Cup Milk
1/4 Cup Vegetable Oil
In a large bowl, combine the milk, olive oil and eggs. Add the mix and stir until moistened (don’t over mix). Pour batter into an 8×4 loaf pan lightly greased, or lined with parchment.
Bake about 45-50 minutes (or until a toothpick inserted in center comes out clean). Cool in the pan for about 10 minutes. Remove from pan and cool completely.
