Pumpkin Spice Tea Cake

While this cake is of course truly phenomenal as an accompaniment with tea, it works just as well for breakfast, or a mid-afternoon picnic.
Ingredients
- 1 Box of Pumpkin Spice Tea Cake Mix
- 3/4 Cup Milk
- 1/4 Cup Olive Oil = 60 ml bottle (included in package)
- 2 Eggs
Directions
- Preheat oven to 350°F.
- In a large bowl, combine the milk, olive oil, and eggs.
- Add the mix and stir until moistened (don't over-mix).
- Pour batter into an 8x4 loaf pan lightly greased, or lined with parchment.
- Bake for about 45-50 minutes (or until a toothpick inserted in the center comes out clean).
- Cool in the pan for about 10 minutes.
- Remove from pan and cool completely.
