Baked Chili Lime Salmon with Potatoes and Broccoli

Weeknights can get crazy.. which is why we rely on easy sheet pan meals like this Chili Lime Salmon! All you need is our Chili Lime Seasoning, some lime juice and zest, olive oil and a lined cookie sheet. This quick and easy meal can be on the table in less than a hour.
Ingredients
For the salmon
- 4 salmon filets
- 1 ½ tbsp Sutter Buttes Chili Lime Seasoning
- 2 tbsp lime juice
- 1 tbsp lime zest
- 2 tbsp Sutter Buttes Arbequina Extra Virgin Olive Oil
- 1 tsp pepper
For potatoes/broccoli
- 2 cups broccoli
- 2 cups russet potatoes, chopped in small pieces
- 2 tbsp Sutter Buttes Arbequina Extra Virgin Olive Oil
- 2 tsp pepper
- 2 tsp garlic powder
Directions
- Preheat oven to 400 degrees.
- Place russet potatoes on a lined baking sheet. Toss potatoes with 1 tbsp olive oil, 1 tsp pepper and 1 tsp garlic powder. Bake for 15 minutes.
- While potatoes are roasting, prepare the salmon. Mix together Sutter Buttes Chili Lime Seasoning, lime juice, lime zest, olive oil and pepper until combined. Place salmon and marinade in a ziplock bag, allow to marinate for a minimum of 5 minutes (Note: You can marinate this overnight if you’d like)
- Place salmon on a separate lined baking sheet from potatoes. Place salmon in the oven and bake for 15 minutes.
- When you place the salmon in the oven, remove baking sheet with the potatoes. Toss the potatoes and push to one side of the sheet.
- Add broccoli and remaining olive oil, pepper, and garlic powder to the other side of the cookie sheet.
- Place back in the oven and bake for an additional 15 minutes while the salmon cooks.
- Remove salmon, potatoes and broccoli from the oven, serve & enjoy!
