2 eggs, separated
2 cups milk, use buttermilk if you can
1/3 cup Sutter Buttes Vanilla extra-virgin olive oil
1 Tbsp amaretto liqueur
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 Tbsp baking powder
1/2 tsp salt
3 Tbsp sugar
Sutter Buttes Dark Chocolate Sauce, Pumpkin Caramel or Sea Salt Caramel Sauce
Separate the eggs yolks and whites, and beat together the egg yolks, milk, oil, and amaretto to combine. Whisk to combine the flour, cornstarch, baking powder, and salt. Set aside. Combine the leftover egg whites with the sugar, and whip to stiff peaks. Stir the liquid into the flour mixture (make sure the batter is still a little lumpy), then fold in the egg whites, being careful not to deflate them.
Pour the batter into a preheated waffle maker and cook for 3-4 minutes.
Warm up the Chocolate or Caramel Sauce on the stove
top or microwave. Top finished waffles with desired
amount of sauce.
