Tuscan Shrimp

Creamy Sun-Dried Tomato Garlic Shrimp is not shy when it comes to flavor, creaminess, and the “wow” factor.
Ingredients
- 2 pounds peeled, deveined large shrimp (tail on or off)
- 3 garlic cloves, minced
- 3 tablespoon Sutter Buttes Extra Virgin Olive Oil
- Salt and pepper for shrimp
- ¼ cup sun-dried tomatoes (optional)
- 1 jar of Sutter Buttes Tuscan Sun-dried tomato simmer sauce
- 2 cups spinach
- 1/2 cup fresh grated parmesan cheese
- Basil for garnishing (optional)
Direction
- Sprinkle peeled, deveined shrimp with salt & pepper and garlic powder on both sides.
- Heat the oil in a skillet over medium-high heat. Once hot, add the shrimp and cook for 4-5 minutes/side or until golden.
- Take the shrimp out of the pan and set aside.
- Add Sutter Buttes Tuscan Sun-dried tomato sauce to the pan.Heat for a minute.
- Add spinach and sun-dried tomatoes.
- Add the shrimp back to the pan.
- Cook for 5 minutes or until the shrimp is fully cooked through and spinach is wilted.
- Stir in the basil and season with extra salt & pepper if needed.
Serve immediately with pasta, mashed potatoes, or rice.
