Tuscan Herb Egg Nests

Feeling bored with your usual breakfast? Try these Tuscan Herb Egg Nests! They're simple to make and look super pretty for a brunch presentation!
Ingredients
- ½ lb potatoes (approx 3 cups)
- 1 tablespoon Fresh Basil Olive Oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 eggs
- 1 tablespoons Tuscan Dipping Herbs
For serving
- 10 oz of spinach, spring mix or arugula
- Hot sauce
Directions
- Preheat oven to 450 degrees and line a baking sheet with parchment paper or a liner.
- Spiralize potatoes into spaghetti-like noodles, or grate with a box grater. If Spiralizing, trim the noodles into smaller lengths and toss into a bowl with olive oil, salt, and pepper.
- Form potato noodles into 8 individual ‘nests’ on baking sheets using tongs. Try to make a well in the middle of the nests.
- Place baking sheets in the oven and cook potatoes for 10 minutes.
- Remove sheets from the oven, crack eggs into the center of each well.
- Sprinkle with Tuscan Dipping Herbs of and return to the oven for another 6-10 minutes, until the egg yolks are cooked to your liking.
- When finished cooking, sprinkle with additional herbs and enjoy!
