Peach & tomato salad with honey vinaigrette

Ingredients:
- 2 heirloom tomatoes, sliced into small wedges
- 2 peaches, sliced into small wedges
- 1 small red onion, sliced thinly
- 2 oz feta cheese, crumbled
- 1/4 tsp Sutter Buttes Himalayan Salt
- fresh mint and basil, cut into small ribbons
Honey Vinaigrette:
- 1/4 cup Sutter Buttes Arbequina Olive Oil
- 3 tbsp Sutter Buttes White Balsamic Vinegar
- 2 tbsp Sutter Buttes Wildflower Honey
- 1 tbsp Sutter Buttes Honey Mustard
- 1/4 tsp Sutter Buttes Himalayan Salt
- 1/4 tsp black pepper
Instructions:
- Combine tomatoes, onions and peaches in a medium bowl, sprinkle with salt.
- Combine all dressing ingredients and mix well.
- Pour on the salad and top with feta, mint and basil - SERVE COLD
