Parchment Packet Mediterranean Vegetables

This quick and easy side-dish is bursting with Mediterranean flavors thanks to our Greek Olive Vinaigrette. Baking these in parchment paper packets makes clean-up super easy too.
Ingredients
- 3 cups cherry tomatoes, washed and stems removed
- 2 cups zucchini, cut into half circles
- 1 medium red onion, large dice
- 1 medium red bell pepper, large dice
- 3/4 cup Sutter Buttes Greek Olive Vinaigrette (Shake well before pouring)
- 1/2 cup feta crumbles
- Salt and Pepper to taste
- Chopped Fresh Parsley or Basil - for garnish
Directions
- Pre-Heat oven to 400 degrees.
- Place prepared vegetables in large bowl and toss with Greek Olive Vinaigrette, add salt and pepper to taste, set aside.
- Cut two sheets of parchment paper into 24" by 12" pieces and fold each in half short ways. Lay each sheet out flat.
- Pour half of the vegetable mixture into the center, near the fold of one of the parchment sheets.
- Fold paper over vegetables, starting in one corner, fold edges toward the center sealing the packet. Repeat for second parchment sheet. Place packets on baking sheet and bake in pre-heated oven for 15-20 minutes.
- Remove from oven and cut packets open carefully as steam will have built up.
- Sprinkle each serving with feta crumbles and fresh herbs.
- Serve in packets for easy clean-up or plate with couscous and your favorite grilled protein.
Note: Packets can be cooked on a gas grill as well.
