This recipe is a great alternate use for our Cinnamon Sugar Breakfast Donuts Baking Kit. Reminiscent of French Breakfast Puffs these muffins come out fluffy and sweet with a crunchy, buttery top.
1 Sutter Buttes Cinnamon Sugar Breakfast Donuts Kit
1/4 cup Butter, Melted
1/4 cup Sutter Buttes Vanilla Olive Oil (Included in Donuts Baking Kit)
1 cup Milk
1 Packet Cinnamon Sugar (Included in Donuts Baking Kit)
3 Tbsp Butter, Melted
Preheat oven to 425°. Grease the wells of your muffin tin. In a large bowl, combine milk, eggs, oil and 1/4 cup melted butter. Add baking mix and stir until combined, do not over mix. Fill muffin cups 3/4 of the way full. Bake for 12-15 minutes or until toothpick inserted in center of muffin comes out clean. Cool until muffins can be safely handled. Pour cinnamon sugar into small bowl. Dip muffin tops in melted butter and roll in cinnamon sugar. Set on rack to cool completely.
