Light and Fluffy Cinnamon Sugar Muffins

This recipe is a great alternate use for our Cinnamon Sugar Breakfast Donuts Baking Kit. Reminiscent of French Breakfast Puffs these muffins come out fluffy and sweet with a crunchy, buttery top.
Ingredients
- 1 Sutter Buttes Cinnamon Sugar Breakfast Donuts Kit
- 1/4 cup Butter, Melted
- 1/4 cup Sutter Buttes Vanilla Olive Oil (Included in Donuts Baking Kit)
- 1 cup Milk
- 2 Eggs
- 1 Packet Cinnamon Sugar (Included in Donuts Baking Kit)
- 3 Tbsp Butter, Melted
Directions
- Preheat oven to 425°.
- Grease the wells of your muffin tin.
- In a large bowl, combine milk, eggs, oil, and 1/4 cup melted butter.
- Add baking mix and stir until combined, do not over-mix.
- Fill muffin cups 3/4 of the way full.
- Bake for 12-15 minutes or until toothpick inserted in center of muffin comes out clean.
- Cool until muffins can be safely handled.
- Pour cinnamon sugar into small bowl. Dip muffin tops in melted butter and roll in cinnamon sugar. Set on rack to cool completely.
