Easy Leftover Turkey Soup

Don't toss that leftover turkey - turn it into soup! This Leftover Turkey and Rice Soup is so cozy and perfect for using up all your Thanksgiving leftovers!
Ingredients
- 1 ½ tablespoons Sutter Buttes Fresh Garlic Olive Oil
- 1 cup onion, diced
- ½ tablespoon garlic, minced
- 1 cup celery, diced
- 1 teaspoon Sutter Buttes Everyday Seasoned Salt
- 1 teaspoon pepper
- 6 cups low/no sodium vegetable stock (you can also use homemade turkey stock)
- 2 bay leaves
- 1 cup white or brown rice
- 1 cup carrots, cut in small circles or diced
- 2 cup leftover turkey, cut in small cubes
Direction
- In a large pot, heat Sutter Buttes Fresh Garlic Olive Oil.
- Saute onions, celery, garlic, Sutter Buttes Everyday Seasoned Salt and pepper on medium high heat until fragrant, about 3 minutes.
- Add vegetable stock, bay leaves, rice and carrots to the pan.
- Bring to a boil, then reduce heat and cover.
- Simmer for 10 minutes, stirring occasionally.
- Add in leftover turkey.
- Simmer uncovered for 5 minutes.
