Creamy Truffle Mashed Potatoes

Say NO to boring mashed potatoes this year and instead serve up these easy Creamy Truffle Mashed Potatoes! Rich, smooth and so delicious - these will go very quickly at your holiday table!
Ingredients
- 5 lbs russet potatoes, peeled and cubed into 1 inch pieces
- ¼ cup milk
- 4 tablespoons Sutter Buttes White Truffle Olive Oil, plus additional for finishing drizzle
- 2 tablespoons salted butter
- 1 teaspoon salt
- 1 1/2 teaspoons pepper
- ½ teaspoon garlic powder
- 1/2 cup sour cream
- Optional: chives for garnish
Directions
- In a large pot, add peeled and cubed potatoes fill with water, and bring to a boil until fork tender, (Approximately 15 minutes). Once fork tender, strain the potatoes.
- While potatoes are straining, take the now empty pot and return to the stove. Add milk and butter. Heat until butter melts. Be careful not to burn the milk.
- Whisk in Sutter Buttes White Truffle Olive Oil until mixture is combined.
- Add the potatoes back to the pot along with seasonings and sour cream.
- Beat the potatoes on high to combine with a hand mixer. Potatoes should be light and fluffy. If not, you can add an extra tablespoon of milk.
- Garnish with chives and additional truffle oil.
