Beef Sheet Pan Fajitas

Ingredients

  • 1 1/4lbs skirt steak, cut thinly sliced strips across the grain
  • 3 cups peppers, cored and sliced thinly
  • 1 medium yellow onion, thinly sliced
  • 1 tbsp garlic, minced
  • 2 tbsp Sutter Buttes Fajita & Taco Seasoning
  • 3 tbsp Sutter Buttes Citrus Habanero Olive Oil
  • 2 tbsp cilantro, chopped
  • 1 lime
  • Additional optional vegetables; zucchini, yellow squash, or mushrooms, thinly sliced
  • flour or corn tortillas. For a healthier option, serve atop brown rice

Directions

  1. Preheat oven to 400 degrees F.
  2. Line the baking sheet with parchment paper for easy cleanup.
  3. Cut steak into strips, slice vegetables, and combine in a bowl with minced garlic.
  4. Drizzle Sutter Buttes Olive Oil of your choice, toss to coat.
  5. Sprinkle Sutter Buttes Fajita and Taco Seasoning over the mixture to coat evenly.
  6. Spread steak and vegetables on the baking sheet and distribute evenly.
  7. Bake for 20 min, at the 5 min mark wrap tortillas in foil and place in oven to heat.
  8. Remove the sheet pan from the oven, splash with lime juice, and add cilantro.
  9. Serve with tortillas or over rice, add your selection of toppings, sour cream, avocado, etc.
