Beef Sheet Pan Fajitas

Ingredients
- 1 1/4lbs skirt steak, cut thinly sliced strips across the grain
- 3 cups peppers, cored and sliced thinly
- 1 medium yellow onion, thinly sliced
- 1 tbsp garlic, minced
- 2 tbsp Sutter Buttes Fajita & Taco Seasoning
- 3 tbsp Sutter Buttes Citrus Habanero Olive Oil
- 2 tbsp cilantro, chopped
- 1 lime
- Additional optional vegetables; zucchini, yellow squash, or mushrooms, thinly sliced
- flour or corn tortillas. For a healthier option, serve atop brown rice
Directions
- Preheat oven to 400 degrees F.
- Line the baking sheet with parchment paper for easy cleanup.
- Cut steak into strips, slice vegetables, and combine in a bowl with minced garlic.
- Drizzle Sutter Buttes Olive Oil of your choice, toss to coat.
- Sprinkle Sutter Buttes Fajita and Taco Seasoning over the mixture to coat evenly.
- Spread steak and vegetables on the baking sheet and distribute evenly.
- Bake for 20 min, at the 5 min mark wrap tortillas in foil and place in oven to heat.
- Remove the sheet pan from the oven, splash with lime juice, and add cilantro.
- Serve with tortillas or over rice, add your selection of toppings, sour cream, avocado, etc.
