This crunchy, delicious apple and pecan salad with Greek olive vinaigrette makes a perfect side for your Holiday menu or light lunch.
4 Tbsp Greek Olive Vinaigrette (Shake well before pouring)
1 Bag pre-washed Arugula (5 oz)
2 Large Red Apples (cored and thinly sliced)
1/2 Cup Roasted Pecans (Or candied pecans if you prefer more sweetness)
¼ Cup Dried Cranberries
1 Large Red Onion (thinly sliced)
¼ Cup Feta Cheese (crumbled)
½ Tsp Salt to taste
¼ Tsp Ground Black Pepper to taste
Toss all ingredients except vinaigrette in a large bowl. Add Greek Olive Vinaigrette and lightly mix everything using a fork.
Serve the salad fresh or cover with cling wrap and place in the refrigerator.
