  1. Preheat oven to 400 degrees.
  2. In a mixing bowl stir together olive oil, mustard, pepper, garlic powder and honey until combined.
  3. Toss chicken and veggies in marinade and let it sit for 5-10 minutes (the longer the better). Place chicken and veggies on a lined cookie sheet.
  4. Bake at 400 degrees for 20-25 minutes until chicken starts to brown and vegetables are soft.
  5. Serve & enjoy!
