Vanilla Amaretto Olive Oil Waffles

Ingredients
- 2 eggs, separated
- 2 cups milk, use buttermilk if you can
- 1/3 cup Sutter Buttes Vanilla extra-virgin olive oil
- 1 Tbsp amaretto liqueur
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3 Tbsp sugar
- Sutter Buttes Dark Chocolate Sauce, Pumpkin Caramel or Sea Salt Caramel Sauce
Directions
- Separate the eggs yolks and whites, and beat together the egg yolks, milk, oil, and amaretto to combine.
- Whisk to combine the flour, cornstarch, baking powder, and salt. Set aside.
- Combine the leftover egg whites with the sugar, and whip to stiff peaks.
- Stir the liquid into the flour mixture (make sure the batter is still a little lumpy), then fold in the egg whites, being careful not to deflate them.
- Pour the batter into a preheated waffle maker and cook for 3-4 minutes.
- Warm up the Chocolate or Caramel Sauce on the stovetop or microwave.
- Top finished waffles with desired amount of sauce.
