Spiced Apple Mini Cheesecakes

Mini Apple Spice Cheesecakes are our favorite fall dessert. Made with just a few simple ingredients and topped with our Warm Spiced Apple Jam - it's hard to eat just one!
Ingredients
For the crust
- 1/2 cup graham cracker crumbs
- 1/2 tablespoon sugar
- 1 tablespoons Sutter Buttes Vanilla Olive Oil
For the cheesecake
- 1, 8 oz package cream cheese
- ½ cup sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ½ cup Sutter Buttes Warm Spiced Apple Jam
Directions
- Preheat the oven to 350 degrees.
- Prepare a mini muffin tin with muffin liners or grease well.
- In a bowl whisk together graham cracker crumbs, sugar and Sutter Buttes Vanilla Olive Oil.
- Place ½-1 full teaspoon of crust mixture in each muffin tin.
- With greased hands, press the mixture down until it is lightly packed.
- In a separate bowl, mix together cream cheese, sugar, egg, vanilla extract and cinnamon until smooth. Pour the batter on top of the graham cracker crust, filling about ¾ the way.
- Bake for 15-20 minutes.
- Cool completely for at least 2 hours.
- Top each cheesecake with 1 tsp Sutter Buttes Warm Spiced Apple Jam.
Makes 24 mini cheesecakes.
