Roasted Chipotle Macaroni and Cheese

Know what we love for a quick weeknight dinner? Macaroni and cheese! This Roasted Chipotle Mac & Cheese is not your average meal! It's loaded with flavor with two different types of cheese and our Roasted Garlic Chipotle Salsa for the most delicious dinner!
Ingredients
- 2 tbsp butter
- ¼ cup flour
- 2 cups milk
- 1 cup Sutter Buttes Roasted Garlic Chipotle Salsa
- 1.5 cup cheddar cheese
- 1.5 cup pepper jack cheese
- 1 tsp pepper
- 1 tsp Himalayan Sea Salt
- 1 tbsp chopped jalapeno
- 1 lb elbow pasta
- ½ cup panko bread crumbs
Directions
- In a large pot bring salted water to a boil. Cook pasta until al dente (Usually around 8 minutes depending on brand you use).
- Preheat oven to 400.
- While pasta is cooking, in a saucepan, melt butter. Whisk in flour until smooth. The mixture will get slightly brown - this is ok.
- Stir in the milk and continue to whisk until milk comes to a boil and is completely smooth. When milk comes to a boil, remove from heat.
- Mix in Garlic Chipotle Salsa, cheese, Sea Salt, pepper and jalapeno into milk mixture, stirring until combined and cheese is melted.
- Drain the pasta and add to the cheese sauce, stirring to cover completely.
- Pour pasta mixture in a greased 9x13 baking dish. Sprinkle bread crumbs on top.
- Bake at 400 for 20 minutes until top is golden brown.
