Mashed Potatoes with Manchego Cheese

There is nothing like mashed potatoes made from scratch. Whip these up for the next family dinner for a stick to your ribs side that is sure to please.
Ingredients
- 2 Tbsp Sutter Buttes Harvest Garlic Olive Oil
- 3 pounds russet potatoes, peeled and cut into 2 inch chunks water
- Sutter Buttes Pink Himalayan Sea Salt
- 1 1/2 cups heavy cream or whole milk
- 1/4 cup Manchego Cheese, cut into 1/4 inch dice
Directions
- Bring potatoes to a boil in a large pot of water. Salt the water and boil over moderately high heat until tender, about 20 minutes.
- Drain and return to the pot.
- Shake the pot over moderately high heat for 1 minute to dry the potatoes.
- Mash the potatoes with a masher, then mash in half the cream/milk.
- Add the remaining cream/milk and mash again.
- Stir in the Manchego Cheese to melt, then slowly stir in 1 Tbsp of the garlic olive oil.
- Season with the pink sea salt and transfer to a serving bowl.
- Drizzle with the remaining 1 Tbsp of garlic olive oil and serve.
