We are so ready to fire up the grill! We’ve got this Lemon Cilantro Grilled Chicken on the menu for our Summer BBQs…and we think it should be on yours too!
1 lb boneless skinless chicken breasts
For the Marinade:
1 tbsp Sutter Buttes Lemon Balsamic Vinegar
1 tbsp lemon zest
1 tbsp fresh lemon juice
3 tbsp Sutter Buttes Mild Arbequina Olive Oil
2 tbsp chopped cilantro
1 tsp pepper
1 tsp salt
In a bowl whisk together marinade until combined. Add chicken and marinade into a bag and allow to sit for a minimum of 30 minutes (overnight is best!)
Heat a grill on medium high heat. Sear chicken for 4-5 minutes on each side, turn heat on low and cook until internal temperature reaches 160 degrees. Rest 5 minutes before serving.
Serve with rice or chop and add to a fresh salad!
