1 1/2 lbs Boneless Chicken Breast or Thigh Meat, cut into bite-sized pieces
1 Tbsp Sutter Buttes Arbequina Extra Virgin Olive Oil or Thai Chili Olive Oil
1 jar Sutter Buttes Indian Butter Chicken Simmer Sauce
Red or Green Chili paste to taste (optional)
Butter and Fresh Coriander for garnish
Steamed Basmati Rice or Toasted Naan Flatbread for serving
Heat oil over medium heat in a large skillet. Sautee chicken for 8 minutes, stirring occasionally. Add simmer sauce and cook an additional 10 to 15 minutes, mix in chili paste if using. Serve with rice or flatbread, garnish with a dollop of butter and chopped fresh coriander.
