Collard Green Fresh Rolls

Light, colorful, and delicious fresh rolls filled with carrots, sweet bell peppers, cucumber, tofu and wrapped in collard green leaves. Served with our Korean BBQ Sauce, it is a perfect appetizer or quick-healthy snack.

Ingredients

  • 4 Tbsp Sutter Buttes Korean BBQ Sauce – for serving the rolls
  • 6 Large Collard Green Leaves
  • ½ Cup Shredded Carrots
  • 1 Cup Thinly Sliced Sweet Bell Pepper
  • 1 Large Cucumber, Thinly Sliced
  • 1 Package Extra Firm Tofu, chopped into bite-size pieces
  • 4-5 Sprigs of Fresh Cilantro
  • 2 Tbsp Sesame Seeds

Directions

  1. Wash and dry the collard green leaves.
  2. Cut leaves in half, removing the tough center stem.
  3. Lay the divided collard leaf on a medium plate.
  4. Layer carrots, bell peppers, cucumber, tofu and cilantro onto one side of a leaf half.
  5. Sprinkle with sesame seeds and roll tightly. Repeat for remaining leaves
  6. Transfer the fresh rolls to a serving platter.

Serve with Korean BBQ Sauce for dipping.
