Chicken Tikka Skewers

Creamy, succulent and extremely delicious Chicken Tikka Skewers using Chili Lime Seasoning. Perfect party appetizer, or serve up with rice and roasted vegetables for an easy meal.
Ingredients
- ½ lb Chicken Breasts – chopped into bite size pieces
- 1.5 Cups Plain Greek Yogurt
- 2 Tbsp Cream Cheese, softened
- 1 Tsp Sutter Buttes Chili Lime Seasoning
- Sutter Buttes Himalayan Pink Salt to taste
- Juice of 1 Lime or Lemon
- 1 Tbsp Sutter Buttes Arbequina Extra Virgin Olive Oil
- Cooking Oil Spray
- 8 Medium Skewers
Garnish
- Thinly sliced onions.
- Lemon wedges
Instructions
- In a large bowl, add yogurt, cream cheese and olive oil, salt, juice of 1 lime or lemon, and ½ Tsp Sutter Buttes Chili Lime Seasoning. Whisk everything to form a smooth paste.
- Add the chicken pieces and mix everything evenly.
- Cover the bowl with plastic wrap or a plate and let marinate in the refrigerator for a minimum of 30 minutes or overnight.
- If using wooden skewers, soak in water overnight to prevent scorching.
- Remove the marinated chicken from fridge.
- Preheat oven to 400 degrees F. Prepare baking tray by coating with cooking spray or covering in parchment.
- Take 1 skewer and add 3-4 pieces of marinated chicken (leaving some space in the top & bottom of skewer). Repeat until all chicken is skewered placing them on prepared baking sheet.
- Bake skewers for 15 minutes, flip and bake for an additional 15 minutes or until the internal temperature reaches 165 degrees.
Serve Hot with thinly sliced onions and lemon wedges.
