BBQ Salmon with Mango Avocado Salsa

Ingredients
- 1-2 lbs fresh salmon
- Sutter Buttes Korean BBQ Sauce
- 2 mangoes, diced
- 1 avocado, diced
- 1/4 cup minced cilantro
- 1/4 cup minced red onion
- 1/2 jalapeño, minced (optional, to taste)
- 1 tsp Sutter Buttes Wildflower Honey
- 2 tbsp lime juice
- salt to taste
- 1 1/2 cups white rice
Directions
- Toss diced mangoes, avocado, cilantro, red onion, jalapeño, honey, and lime juice in a bowl to combine.
- Add salt to taste, adjust as needed.
- Cook rice according to package instructions.
- Dice salmon into cubes. Rub Korean BBQ liberally over the top part of the salmon. Bake for 6-12 minutes, depending on the thickness of your salmon and your desired doneness.
- To assemble, add rice to a plate, spoon mango avocado salsa, and add salmon. Finish with a squeeze of lime and enjoy!
