Apple and Sausage Stuffing

This flavorful sausage and apple stuffing is a favorite comfort food, and a must for Thanksgiving feasts. No matter if you like crispy edges or the fluffy moist middle – this dressing will be sure to please.

4 tablespoons Sutter Buttes Olive Oil
1 pound bulk pork sausage, mild or spicy
1 cup diced celery
1 cup diced onion
1 cup diced peeled, cored apple
2 garlic cloves, minced
1 tablespoon minced fresh sage
1 bay leaf
8 cusp dried French bread and/or cornbread, dried and cut into 1″ cubes
1 1/2 cups low-sodium chicken broth

Heat oil in large, heavy skillet over medium heat. Add sausage; saute until cooked through and browned, breaking into pieces with spoon, about 8 minutes. Using slotted spoon, transfer sausage to large bowl. Add celery and next 6 ingredients to drippings in skillet. Saute over medium heat until vegetables are soft, about 5 minutes.  Discard bay leaf.  Add mixture to sausage.
Pre-heat oven to 350 degrees.  Oil 13x9x2-inch baking dish.  Add bread to sausage mixture, wish broth and Butter Olive Oil together, mix into stuffing, add salt and pepper to taste.  Transfer stuffing to oiled baking dish.  Bake uncovered until cooked through and brown on top, about 50 minutes.
