  1. Start by cutting cucumbers into coins.
  2. Add the cucumbers to a bowl or jar.
  3. Add cubed avocado, finely diced large shallot (or red onion), and a large handful of finely chopped cilantro.
  4. Add in roasted pistachios for some crunch and flavor.
  5. Finally, top it all off with crumbled feta, the zest and juice of a lime, olive oil, a generous pinch of salt, and chili lime seasoning.
