Chili Lime Cucumber Avocado Salad

Ingredients
- 4-5 Persian cucumbers
- 1 avocado, cubed
- 1 large shallot, diced (or 1/3 red onion)
- Large handful of cilantro, finely chopped
- 2 tbsps roasted pistachios
- 1 oz crumbled feta
- 1 large lime
- 1 tbsp Sutter Buttes Arbequina Olive Oil
- 1 tbsp Sutter Buttes Chili Lime Seasoning
- A pinch of salt
Directions
- Start by cutting cucumbers into coins.
- Add the cucumbers to a bowl or jar.
- Add cubed avocado, finely diced large shallot (or red onion), and a large handful of finely chopped cilantro.
- Add in roasted pistachios for some crunch and flavor.
- Finally, top it all off with crumbled feta, the zest and juice of a lime, olive oil, a generous pinch of salt, and chili lime seasoning.
