BBQ Salmon with Mango Avocado Salsa

  1. Toss diced mangoes, avocado, cilantro, red onion, jalapeño, honey, and lime juice in a bowl to combine.
  2. Add salt to taste, adjust as needed.
  3. Cook rice according to package instructions.
  4. Dice salmon into cubes. Rub Korean BBQ liberally over the top part of the salmon. Bake for 6-12 minutes, depending on the thickness of your salmon and your desired doneness.
  5. To assemble, add rice to a plate, spoon mango avocado salsa, and add salmon. Finish with a squeeze of lime and enjoy!
