Peach Burrata Salad

Ingredients
Vinegar
- 1/4 cup Sutter Buttes Peach Balsamic Vinegar
- 1/2 cup Sutter Buttes Arbequina Olive Oil
- 1/2 tbsp Sutter Buttes Honey Mustard
- 2 tsp Sutter Buttes Wildflower Honey
- 1/2 tsp minced garlic
- Salt and pepper to taste
Salad
- 2 ripe peaches, sliced
- 1 cup cherry tomatoes, halved
- 8 oz burrata
- 2-3 basil leaves, sliced into small ribbons
Directions
- Combine all vinaigrette ingredients in a jar or small container with a lid. Seal tightly and shake well until fully blended. Taste and adjust salt and pepper if needed. Refrigerate until ready to use.
- In a shallow serving bowl, layer the sliced peaches and cherry tomatoes.
- Tear the burrata and scatter it over the top of the salad.
- Drizzle with your desired amount of vinaigrette. (Store any remaining vinaigrette in the refrigerator for later use.)
- Top with fresh basil ribbons.
- Serve immediately and enjoy!
