Peach Burrata Salad

  • 2 ripe peaches, sliced
  • 1 cup cherry tomatoes, halved
  • 8 oz burrata
  • 2-3 basil leaves, sliced into small ribbons

Directions

  1. Combine all vinaigrette ingredients in a jar or small container with a lid. Seal tightly and shake well until fully blended. Taste and adjust salt and pepper if needed. Refrigerate until ready to use.
  2. In a shallow serving bowl, layer the sliced peaches and cherry tomatoes.
  3. Tear the burrata and scatter it over the top of the salad.
  4. Drizzle with your desired amount of vinaigrette. (Store any remaining vinaigrette in the refrigerator for later use.)
  5. Top with fresh basil ribbons.
  6. Serve immediately and enjoy!
