Greek Salad with Feta

Simple to prepare and super tasty, our Greek Salad with Feta will be your new favorite side dish.  A little chopping and mixing and before you know it you are done!

Ingredients

  • 1-2 cucumbers, peeled, seeded, and sliced into 1/2" wedges
  • 1 Red Bell Pepper, cut into bite-sized pieces
  • 1 Yellow Bell Pepper, cut into bite-sized pieces
  • 2 cups tomatoes of your choice, cut into bite-sized pieces
  • 1/2 Red Onion, sliced in half rounds
  • 1/2 Feta Cheese, 1/2" cubed (not crumbled)
  • 1/4 cup kalamata olives - pitted
  • Sutter Buttes Himalayan Pink Salt and Black Pepper to taste
  • Pinch of Oregano for garnish
  • 1/2 Cup Sutter Buttes Greek Olive Vinaigrette (Shake well before pouring)

Directions

  1. Place the cucumber, peppers, tomatoes and red onion in a large bowl.
  2. Season with salt and pepper to taste and pour vinaigrette over vegetables.
  3. Add the feta cheese and olives and toss lightly.
  4. Set aside for 30 minutes to allow the flavors to blend.
  5. Top with oregano, serve at room temperature.
