Creamy Truffle Mashed Potatoes

Say NO to boring mashed potatoes this year and instead serve up these easy Creamy Truffle Mashed Potatoes! Rich, smooth and so delicious - these will go very quickly at your holiday table!

Ingredients

  • 5 lbs russet potatoes, peeled and cubed into 1 inch pieces
  • ¼ cup milk
  • 4 tablespoons Sutter Buttes White Truffle Olive Oil, plus additional for finishing drizzle
  • 2 tablespoons salted butter
  • 1 teaspoon salt
  • 1 1/2  teaspoons pepper
  • ½ teaspoon garlic powder
  • 1/2 cup sour cream
  • Optional: chives for garnish

Directions

  1. In a large pot, add peeled and cubed potatoes fill with water, and bring to a boil until fork tender, (Approximately 15 minutes). Once fork tender, strain the potatoes.
  2. While potatoes are straining, take the now empty pot and return to the stove. Add milk and butter. Heat until butter melts. Be careful not to burn the milk.
  3. Whisk in Sutter Buttes White Truffle Olive Oil until mixture is combined.
  4. Add the potatoes back to the pot along with seasonings and sour cream.
  5. Beat the potatoes on high to combine with a hand mixer. Potatoes should be light and fluffy. If not, you can add an extra tablespoon of milk.
  6. Garnish with chives and additional truffle oil.
